World Mina Day: The Mina-nese Pizza

Just for fun we thought it would be great to invent a custom pizza & cocktail to celebrate World Mina Day – 2-2-22. As I mentioned in the blurb for the cocktail recipe, likewise trying to invent something brand new in the world of pizza is pretty difficult as most of the good ideas have been thought of already!

However, armed with the idea of adding Kimchi pickle (inspired by the name for the Mina’s newest SNARK) it was then just a question of solving the taste ‘trilemma’ and finding to complementing flavours to go with it.

I know Pear isn’t traditionally thought of as a topping for pizza, put when you combine the sweet flavour with the melted Goats Cheese and a dash of Kimchi on the top it was actually pretty good!

Like Mina Protocol the pizza does things slightly different to the norm and this pizza’s slightly savoury feel is perfect for #WorldMinaDay or a Friday afternoon Aperitivo with friends and the aforementioned ‘Mina Colada’ cocktail.

Mina-nese Pizza (makes 2 pizzas)

Mina-nese Pizza for World Mina Day

Ingredients

Pizza Base
400g plain flour
1 x 7g sachet fast action dried yeast (or ideally sour dough starter / lievito madré)
1 tsp fine sea salt
2 tbsp olive oil

Pizza Topping
400ml Passata
A splash of Olive oil
300g Goats Cheese
2 Ripe Pears (peeled and decored)
Salt & Pepper
Kimchi Pickle

Method:
1: Mix the flour, yeast and salt together in a mixing bowl. Make a small well in the centre and add the olive oil
2: Add about 225ml water to bring together as a dough.
3: Tip out onto a floured surface and knead well for a couple of minutes
4: Leave to rest under the upturned bowl in a warm place for approx 30-45 mins
5: Pre-heat oven to hottest setting (ideally build a clay pizza oven in your backyard)
6: Cut dough into to and use your hands to form 2 pizza base shapes. Try not to play with the dough too much, you want to keep as much air in it as possible
7: Mix a dash of olive oil and salt & pepper to the Passata, spread evenly over the pizza bases
8: Slice the pears and spread evenly over the pizza,
9: Break into small pieces or cut the goats cheese thinly and add to the pizza.
10: Spread Kimchi pickle over the pizza, it is quite hot, so not too much, unless you like it spicy!
11: Place Pizza in hot oven for approx 15-20 minutes depending on how hot your oven gets, just keep an eye on it.
